If you’re anything like me, then we struggle with eating healthy-ish meals at home. The at home is where I struggle the most. I’ve never been a good cook, and I’ve never really had interest in getting better at it until recently. I spend a ton of time looking into recipes that are labeled as “quick and easy” but usually are neither. It’s more apparent than ever that “quick and easy” are extremely subjective.
With that said, this recipe really is quick and easy. It’s also extremely customizable. I personally use 7 food ingredients and today I used 3 basic seasonings, but I’ll also walk you through how to customize it and make it your own.
Grocery List if you want to make one just like me:
- 2 Celery stalks
- 2 Zesty Dill Pickle Spears
- Mayonnaise (I use Miracle Whip, but my husband is a regular mayo person)
- Spinach
- Deli meat – I used Oscar Mayer Carving Board Chicken Breast
- Shredded Cheese
- 2 Tortillas – I used the flour tortillas in the burrito size
- Kosher Salt
- Pepper
- Garlic Powder – I used a seasoning blend called “Not Your Mama’s Garlic Seasoning. I got it from a vendor at a local market and I can’t for the life of me remember what her business name was 😦
Tools Used:
- Cutting Board
- Chef’s Knife (I use this one from Pampered Chef and it’s my preferred knife)
- Small mixing bowl
- Spoon

I’ll walk you through exactly what I did for my wraps and after, I’ll talk about the customization. Just so y’all are aware, most of my measurements ARE NOT precise. I’m a “measure with your heart” kind of gal.
Once I got all of my ingredients out of the fridge, I started with the celery. I used 2 celery stalks and cut each stalk into 4 long strips, then chopped those strips into small chunks/dices. This made them into smaller pieces that weren’t so cumbersome to eat. Put those in your bowl and to the side. Do the same with your pickle spears. In your bowl, add a few dollops of your mayo (measure with your heart, fam) and mix that up until combined. Set to the side.
Grab your tortilla and put a thin layer of mayo on it. Then add a layer of spinach. On top of the spinach, I put a few pieces of the chicken, and then my mixture of celery, pickles and mayo. Top with shredded cheese and sprinkle your spices on top of the cheese. Roll it to your hearts desire, and voila! You have yummy chicken salad wraps that took you ~15 minutes to make. Honestly it takes me longer to get out my ingredients than it does for me to assemble these wraps.


Now, if you’re like me, you hate having to dig through your recipe box (are those even a thing in this day and age?) for every meal you’re going to make. This is why I love this recipe. It’s completely customizable. Let me walk you through the many MANY ways you can modify this.
- Instead of pieces of chicken breast, you can use thin sliced deli meat, or completely swap out the meat for eggs or another protein you like
- Instead of adding actual pieces of pickle, you can just add a splash of pickle juice (this is what I do with my husband’s – he’s not a fan of pickles)
- real mayo instead of miracle whip
- different kinds of tortillas
- add other condiments like mustard or relish
As you can see, there are so many ways you can change this up to make it your own. And because it’s so easy, you don’t have to go through and get your recipe out every time.
